For the Watermelon and Feta Bites
- 1 small watermelon
- 1 large block of feta cheese
- Fresh mint leaves
- ¼ cup pistachios, crushed
For the Spicy Honey Glaze
- ¼ cup honey
- 2 tbsp white balsamic vinegar
- 2 tsp crushed red pepper
Instructions
- Prepare the Spicy Honey Glaze: In a saucepan, combine honey, crushed red pepper, and white balsamic vinegar. Bring the mixture to a gentle simmer over medium heat. Allow it to simmer until the glaze thickens enough to coat the back of a spoon, then remove from heat and set aside to cool.
- Cut the Watermelon: Slice the watermelon in half and carefully remove the rind. Cut the watermelon flesh into a rectangle about 1 inch thick. Then, slice this rectangle lengthwise into two pieces approximately ½ inch thick each, as demonstrated in the accompanying video.
- Slice the Feta Cheese: Cut the block of feta to match the watermelon rectangle’s size. Then slice each feta rectangle lengthwise in half to create pieces about ½ inch thick.
- Assemble the Bites: Layer a piece of watermelon as the base, followed by a slice of feta cheese, then top with another piece of watermelon. Cut the layered stack into 6 square portions. Repeat the process with the remaining watermelon and feta slices.
- Add Toppings: Drizzle the prepared spicy honey glaze over the assembled bites. Sprinkle crushed pistachios and fresh mint leaves on top. Finally, skewer each bite for easy serving and enjoy immediately.
