  • Author: Harry
  • Total Time: 25 minutes
  • Yield: 12 bites 1x
  • Diet: Vegetarian

Description

These Watermelon and Feta Bites are a refreshing and savory-sweet appetizer perfect for summer gatherings. Juicy watermelon layers with creamy feta cheese, drizzled with a spicy honey and white balsamic glaze, topped with fresh mint and crunchy pistachios create a delightful combination of flavors and textures.

Ingredients

Scale

For the Watermelon and Feta Bites

  • 1 small watermelon
  • 1 large block of feta cheese
  • Fresh mint leaves
  • ¼ cup pistachios, crushed

For the Spicy Honey Glaze

  • ¼ cup honey
  • 2 tbsp white balsamic vinegar
  • 2 tsp crushed red pepper

Instructions

  1. Prepare the Spicy Honey Glaze: In a saucepan, combine honey, crushed red pepper, and white balsamic vinegar. Bring the mixture to a gentle simmer over medium heat. Allow it to simmer until the glaze thickens enough to coat the back of a spoon, then remove from heat and set aside to cool.
  2. Cut the Watermelon: Slice the watermelon in half and carefully remove the rind. Cut the watermelon flesh into a rectangle about 1 inch thick. Then, slice this rectangle lengthwise into two pieces approximately ½ inch thick each, as demonstrated in the accompanying video.
  3. Slice the Feta Cheese: Cut the block of feta to match the watermelon rectangle’s size. Then slice each feta rectangle lengthwise in half to create pieces about ½ inch thick.
  4. Assemble the Bites: Layer a piece of watermelon as the base, followed by a slice of feta cheese, then top with another piece of watermelon. Cut the layered stack into 6 square portions. Repeat the process with the remaining watermelon and feta slices.
  5. Add Toppings: Drizzle the prepared spicy honey glaze over the assembled bites. Sprinkle crushed pistachios and fresh mint leaves on top. Finally, skewer each bite for easy serving and enjoy immediately.

Notes

  • The glaze can be made ahead and stored in the refrigerator for up to a week; warm slightly before drizzling.
  • Adjust the amount of crushed red pepper in the glaze to control the spiciness to your preference.
  • Use fresh, ripe watermelon for the best flavor and juiciness.
  • Serve immediately after assembly to keep watermelon fresh and feta firm.
  • These bites are perfect for parties and can be made in advance, assembling just before serving.
