Instructions

  1. Prepare Roasted Sweet Potatoes: Preheat your cooking device. For air frying, set the air fryer to 400°F. Toss diced sweet potatoes with 1 tablespoon olive oil, salt, pepper, garlic powder, onion powder, and paprika until well coated. For air fryer, add the sweet potatoes to the basket and cook for 12-15 minutes until tender and easily pierced with a fork. For oven roasting, preheat to 425°F, spread the seasoned sweet potatoes on a parchment-lined or oiled baking sheet, and roast for 25-35 minutes until tender.
  2. Cook Ground Beef: While sweet potatoes cook, heat 1 tablespoon olive oil in a skillet over medium heat. Add the ground beef and sprinkle taco seasoning evenly over it. Break the meat apart as it cooks and sauté for 7-10 minutes, or until the beef is fully cooked with no pink remaining.
  3. Assemble Bowls: Divide the cooked ground beef and roasted sweet potatoes into four portions. Add 1/2 cup cottage cheese, avocado slices (about 1/4 to 1/2 avocado per bowl), and chopped cilantro to each bowl. Drizzle with hot honey and sprinkle red pepper flakes to taste. Finish with a squeeze of fresh lime juice and jalapeño slices if desired for extra heat and flavor.
