Quick to prepare and no cooking required, it’s an ideal healthy accompaniment to any meal.

Ingredients

Scale

Salad Ingredients

  • 3 to 4 tomatoes, sliced into 1/3″ (0.5cm) slices
  • 1 tbsp baby capers, or ordinary capers roughly chopped
  • Few tinned artichokes, roughly chopped
  • 1/4 red Spanish onion, finely sliced
  • 1 1/2 tsp salt flakes
  • Freshly ground black pepper, to taste
  • 2 tbsp olive oil
  • 1/2 lemon, juice only
  • 2 tbsp fresh oregano leaves (or other herb of your choice)

Instructions

  1. Arrange Tomatoes: Lay the sliced tomatoes on a plate, slightly overlapping them to create a base for the salad.
  2. Add Capers, Artichokes, and Onion: Scatter the baby capers, roughly chopped artichokes, and finely sliced red onion evenly over the tomatoes.
  3. Season: Sprinkle the salt flakes and freshly ground pepper over the layered ingredients to enhance the flavors.
  4. Add Herbs: Scatter fresh oregano leaves on top to introduce a fragrant and herbal note to the salad.
  5. Dress the Salad: Drizzle olive oil and the juice of half a lemon evenly over the entire dish to brighten and bring cohesion to the ingredients.
  6. Rest: Let the salad sit for about 5 minutes, allowing the salt to draw out the tomato juices just enough to create a flavorful mix without making the salad too watery.

Notes

  • Use ripe, firm tomatoes for the best texture and flavor.
  • If baby capers are not available, regular capers chopped roughly work well.
  • Adjust lemon juice and salt according to taste preferences.
  • Serve immediately after the 5-minute resting period to enjoy optimal freshness.
  • Try using other fresh herbs like basil or parsley if oregano isn’t available.
