Instructions

  1. Prepare the Filling: In a medium-sized bowl, combine the cream cheese, sugar, and crushed ladyfinger cookies. Mix thoroughly until fully combined and smooth.
  2. Crush Ladyfingers: To crush ladyfinger cookies, place them in a food processor or blender and pulse until they turn into a fine powder, ensuring a smooth texture.
  3. Add Coffee Flavor: Stir in 1 tablespoon of brewed coffee until the mixture turns light brown. Sprinkle in 2 ½ tablespoons of instant coffee crystals and fold carefully until the filling has a firm cookie dough-like texture.
  4. Chill the Filling: Refrigerate the filling for 10 minutes to help it firm up for shaping.
  5. Form Truffle Balls: Once chilled, shape the filling into 1-inch balls. Dip each ball briefly into the remaining brewed coffee, then place them on a baking sheet. You should get about 10-12 truffles.
  6. Second Chill: Chill the shaped truffles for an additional 10 minutes to firm up further.
  7. Prepare Topping Mix: While chilling, combine ½ tablespoon of instant coffee crystals with 1 tablespoon of cocoa powder and set aside.
  8. Melt Chocolate: Melt the milk chocolate in the microwave at 30-second intervals, stirring after each until smooth and glossy.
