Ingredients
Scale
Matcha Mixture
- 1 tbsp quality grade matcha
- 1/4 cup cold whipping cream
Mousse Base
- 120g white chocolate, chopped
- 2 tbsp sugar
- 1 tsp vanilla extract
- Matcha cream mixture (from above)
Whipped Cream
- 1 1/2 cups cold whipping cream
- Extra whipping cream for topping
Instructions
- Prepare Matcha Mixture: In a small bowl, combine the matcha powder with 1/4 cup of cold whipping cream. Whisk vigorously using a bamboo matcha whisk or a regular whisk until the mixture is smooth and lump-free.
- Melt Chocolate Mixture: In a medium saucepan over low to medium heat, combine the chopped white chocolate, the matcha cream mixture, sugar, and vanilla extract. Whisk continuously until the chocolate has fully melted and the mixture is smooth, then remove from heat.
- Whip Cream: Using a stand mixer or hand whisk, whip the 1 1/2 cups of cold whipping cream until stiff peaks form. The cream should hold its shape firmly when the whisk is lifted.
- Fold Cream Into Chocolate Mixture: Allow the melted matcha-chocolate mixture to cool slightly, then gently fold the whipped cream into it. Mix carefully to maintain the airy texture while blending evenly.
- Chill the Mousse: Transfer the mousse into serving glasses or bowls. Refrigerate for at least two hours or until the mousse is firm and set.
- Serve: Before serving, add a dollop of extra whipped cream on top for garnish and enjoy this creamy, flavorful dessert.
Notes
- Use quality matcha powder for the best flavor and vibrant green color.
- Ensure the whipping cream is cold before whipping to achieve stiff peaks.
- Do not overheat the white chocolate to avoid seizing; use low heat and constant whisking.
- For a dairy-free option, substitute coconut cream for whipping cream and use dairy-free white chocolate.
- The mousse can be prepared a day ahead and kept refrigerated.
