Instructions

  1. Heat the Oil: In a large skillet, heat 1 cup of vegetable oil over medium-high heat until hot enough for frying.
  2. Prepare the Filling: In a medium bowl, mash the 3 diced avocados to your desired consistency. Then add the diced red onion, Roma tomato, chopped cilantro, garlic powder, lime juice, and salt and pepper. Mix well to combine all the flavors.
  3. Assemble the Egg Rolls: Lay one egg roll wrapper on a clean workspace with one corner pointing toward you. Spoon a portion of the avocado filling into the center of the wrapper.
