Sweet Potato Mixture

  • 3 lbs Sweet Potatoes, peeled and cubed
  • 1 cup Whole Milk
  • 1 stick Salted Butter (approximately 8 tablespoons)
  • ¼ cup Brown Sugar, loosely packed
  • ½ teaspoon Kosher Salt
  • 1 teaspoon Ground Cinnamon
  • ¼ teaspoon Ground Nutmeg
  • ¼ teaspoon Ground Clove
  • ¼ cup Maple Syrup
  • ½ teaspoon Vanilla Extract

Topping

  • 1 bag Mini Marshmallows (about 1012 ounces)

Instructions

  1. Preheat the oven: Set the oven temperature to 375°F (190°C) to prepare for baking the casserole.
  2. Cook sweet potatoes: Place the peeled and cubed sweet potatoes in a large pot, cover with cold water, and season generously with salt. Bring to a boil, then reduce to a simmer and cook for about 10 minutes until the potatoes are fork-tender.
  3. Mash and season: Drain the cooked sweet potatoes and return them to the pot. Mash until smooth and free of large lumps. Stir in the whole milk, salted butter, brown sugar, kosher salt, ground cinnamon, nutmeg, clove, maple syrup, and vanilla extract until well combined.
  4. Assemble the casserole: Transfer the sweet potato mixture into a large oven-safe baking dish, spreading it out evenly and smoothing the top.
  5. Add marshmallow topping: Evenly distribute the mini marshmallows over the top of the sweet potato mixture, covering the surface completely.
  6. Bake the casserole: Place the baking dish in the preheated oven and bake for 20 to 25 minutes, or until the marshmallows have melted and turned golden brown and the casserole is bubbling around the edges.
  7. Let it rest: Remove the casserole from the oven and allow it to rest for 5 minutes before serving to let it set slightly and cool down for safe consumption.

  • You can adjust the sweetness by adding more or less brown sugar or maple syrup according to your preference.
  • For a dairy-free version, substitute whole milk with coconut or almond milk and use vegan butter.
