Description

Strawberry Fool is a light, creamy dessert made by folding whipped cream and Greek yogurt into macerated strawberries sweetened with rose syrup and icing sugar. This refreshing and easy-to-make treat can be served layered in glasses or simply chilled and scooped into bowls, ideal for a summery, fruity indulgence.

Ingredients

Scale

Strawberries

  • 200 gram strawberries
  • 1/2 teaspoon lemon juice
  • 3 tablespoon rose syrup (optional)

Dairy & Sweeteners

  • 200 millilitres double cream (whipped)
  • 150 gram Greek yogurt
  • 4 tablespoon icing sugar (adjust according to sweetness)

Garnishing

  • Mint leaves
  • Strawberries for garnishing

Instructions

  1. Prepare Strawberries: Wash and pat dry the strawberries, then place them in a large bowl.
  2. Macerate Strawberries: Add rose syrup and lemon juice to the strawberries and mash them using a fork or potato masher. Stir well, then refrigerate for a while to let the flavors meld.
  3. Sweeten Yogurt: Combine icing sugar with the Greek yogurt, mixing thoroughly until smooth.
  4. Fold Cream into Yogurt: Gently fold the whipped double cream into the sweetened yogurt mixture to maintain a light texture.
  5. Combine Mixtures: Carefully fold the macerated strawberry mixture into the combined cream and yogurt bowl, mixing slowly to keep the airy consistency.
  6. Chill Dessert: Cover and refrigerate the mixture for at least 30 minutes to allow the flavors to meld and the dessert to set.
  7. Serve: Spoon the fool into individual bowls or glasses.
  8. Garnish: Decorate with fresh mint leaves and sliced strawberries for an appealing finish.
  9. Optional Layering: For layered serving, mix half of the macerated strawberries with all of the cream and yogurt mixture.
  10. Layer in Glasses: In serving glasses, alternate layers of plain macerated strawberries with layers of the cream-strawberry mixture to create a visually appealing dessert.

Notes

  • Adjust the amount of icing sugar and rose syrup according to your preferred sweetness level.
  • For a dairy-free version, substitute cream and yogurt with coconut cream and coconut yogurt.
  • Chilling the strawberries after macerating enhances the flavor infusion.
  • You can skip rose syrup if you prefer a more natural strawberry taste.
  • This dessert is best served fresh but can be kept refrigerated for up to 24 hours.
