These Spinach Ricotta Bites are a delicious and savory appetizer, combining creamy ricotta and mozzarella cheeses with tender spinach and aromatic onions. Baked to golden perfection in mini muffin cups, they make perfect finger foods for parties or a tasty snack any time.

Ingredients

Scale

Spinach Ricotta Bites Ingredients

  • 2 tablespoons butter
  • 1 small yellow onion, chopped
  • 1 clove garlic, minced
  • 2 large eggs, beaten
  • 1 cup ricotta cheese (low or full fat)
  • 1/2 cup mozzarella cheese, shredded
  • 1/2 cup parmesan cheese, grated
  • 10 ounce package frozen chopped spinach, defrosted and drained well
  • 1/4 teaspoon kosher salt

Instructions

  1. Preheat the oven: Set your oven to 350°F (175°C) so it reaches the perfect temperature while you prepare the mixture.
  2. Sauté the onions: Melt the butter in a sauté pan over medium heat. Add the chopped onions and cook for about 4 minutes until they become tender and translucent.
  3. Add garlic: Stir in the minced garlic and cook for an additional 1 minute until fragrant, then remove the pan from heat and let the mixture cool.
  4. Prepare cheese and egg mixture: In a bowl, whisk the beaten eggs, then stir in ricotta, shredded mozzarella, and grated parmesan cheeses until fully combined.
  5. Combine spinach and onion mixture: Carefully fold in the well-drained spinach, kosher salt, and the cooled sautéed onion and garlic mixture to the cheese and egg base.
  6. Fill muffin cups: Grease mini muffin cups with butter or cooking spray. Spoon the mixture evenly into each cup, filling them almost to the top.
  7. Bake: Place the muffin cups on a baking sheet and bake in the preheated oven for 20 to 25 minutes, or until the bites are set in the center and golden on top.
  8. Serve: If the bites stick to the sides, use a sharp knife to carefully loosen them before removing from the tray. Serve warm as an appetizer or snack.

Notes

  • Make sure to thoroughly drain the spinach to prevent excess moisture from making the bites soggy.
  • You can substitute frozen spinach with fresh spinach, but make sure to cook and drain it completely before use.
  • Use a mini muffin pan for perfect bite-sized portions.
  • For a lower fat version, use low-fat ricotta and mozzarella cheeses.
  • The bites can be made ahead of time and reheated in the oven before serving.
