- 1 tbsp Coles Classic Olive Oil
- 1 kg whole beef topside roast, cut into 3cm-thick steaks
- 20 g Coles Australian Salted Butter
Vegetables and Aromatics
- 2 brown onions, halved, thinly sliced
- 3 garlic cloves, thinly sliced
Liquids and Sauces
- 2 tbsp tomato paste
- 500 ml (2 cups) chicken stock
- 1 1/2 tbsp Worcestershire sauce
Herbs and Seasonings
- 6 fresh thyme sprigs
- 3 dried bay leaves
- 1 1/2 tbsp cornflour
- 2 tbsp water
- 2 tbsp chopped fresh continental parsley
- Parsley, extra, to serve

- Mashed potato, to serve
Instructions
- Brown the Steaks: Heat the olive oil in a large frying pan over high heat. Cook the steaks in two batches, about 3 minutes each side, until nicely browned. Transfer the browned steaks to the slow cooker.
- Cook the Onions and Garlic: Add butter to the frying pan and cook until foaming. Add the sliced onions and reduce heat to medium-low. Cook while stirring often for 10 minutes, until onions are browned and tender. Add the garlic and cook for an additional minute until fragrant.
- Prepare the Sauce: Stir the tomato paste into the onions and garlic in the pan and cook for 1 minute. Pour in the chicken stock, Worcestershire sauce, fresh thyme sprigs, and bay leaves. Bring the mixture to a simmer, then pour it over the steaks in the slow cooker. Cover and cook on High for 5 hours or until the beef is tender.
- Thicken the Sauce: Mix the cornflour with water until smooth, then add to the slow cooker. Continue cooking for 20 minutes until the sauce thickens slightly. Season with salt and pepper to taste. Stir through the chopped fresh continental parsley.
- Serve: Sprinkle with extra fresh parsley before serving. Serve the braised steaks and onions with creamy mashed potato, if desired.

- For best flavor, allow the beef to brown properly before slow cooking.
- Use fresh herbs where possible for a vibrant taste.
- If you prefer a thicker sauce, you can add a little extra cornflour slurry.
