  • Yield: 4 to 6 servings 1x

Description

A savory and tender Slow Cooker Beef and Broccoli recipe featuring thinly sliced beef chuck roast cooked in a flavorful sauce made from beef stock, soy sauce, brown sugar, sesame oil, garlic, and ginger. This dish is slow-cooked to perfection, then thickened with cornstarch and combined with fresh broccoli florets for a comforting and easy-to-make meal.

Ingredients

Scale

Beef and Sauce

  • 2 lbs. beef chuck roast, sliced thinly across the grain
  • 1 cup beef stock (or beef broth)
  • ½ cup soy sauce
  • ¼ cup brown sugar
  • 1 tsp. sesame oil
  • 3 cloves garlic, minced
  • 1 tsp. dried ground ginger (or 1 Tbsp. fresh grated ginger)

Thickening and Vegetables

  • ¼ cup cornstarch
  • 12 oz. broccoli florets (about 3 cups)

Instructions

  1. Prepare the sauce: In a medium sized mixing bowl, whisk together the beef stock, soy sauce, brown sugar, sesame oil, minced garlic, and ground ginger until fully combined and smooth.
  2. Layer beef and sauce: Lay the thinly sliced beef at the bottom of the slow cooker. Pour the prepared sauce over the beef, then mix gently to ensure all beef slices are coated with the sauce.
  3. Slow cook the beef: Cover and cook on HIGH for 3 hours or on LOW for 5 to 6 hours, until the beef is tender and cooked through.
  4. Thicken sauce and add broccoli: Remove ¼ cup of the cooking liquid from the slow cooker and whisk it together with the cornstarch until smooth. Pour this mixture back into the slow cooker and stir well. Add the broccoli florets, then continue cooking on HIGH for 30 minutes or until the broccoli is tender and the sauce has thickened to a desirable consistency.
  5. Serve: Once cooked, serve the beef and broccoli hot with your choice of sides such as steamed rice or noodles.

Notes

  • Be sure to slice the beef thinly across the grain for maximum tenderness.
  • Adjust the brown sugar quantity to balance sweetness to your preference.
  • Using fresh ginger instead of dried gives a brighter flavor but dried ginger works well too.
  • For gluten-free option, use tamari or a gluten-free soy sauce.
  • You can add more vegetables like carrots or bell peppers for variety.
  • Leftovers store well in the refrigerator for up to 3 days.
