Instructions
- Prepare Oven and Ingredients: Position a rack in the center of the oven and preheat to 425ºF (220ºC). On a large sheet pan, add the roughly chopped bell peppers, fresh gnocchi, and minced garlic. Drizzle with 2 tablespoons of extra-virgin olive oil, then season with kosher salt, freshly ground black pepper, and a pinch of crushed red pepper flakes. Toss everything together thoroughly to ensure even coating.
- Roast the Vegetables and Gnocchi: Place the sheet pan in the oven and roast for 30 minutes, tossing the contents halfway through cooking. You want the bell peppers to become completely softened and the gnocchi to develop a golden brown color, adding delicious crispiness and flavor.
- Finish with Burrata, Basil, and Glaze: Remove the roasted peppers and gnocchi from the oven. Immediately top with torn burrata pieces and fresh basil leaves.
