- 100 g Lotus Biscoff cookies (1 cup), chopped (or any cookies to your liking)
- 75 g Small marshmallows (1 ½ cups) (or big ones cut into small pieces)
Instructions
- Melt Chocolate: Use a double boiler to gently melt the milk chocolate until smooth and creamy. Stir in the coconut oil to enhance the chocolate’s texture and gloss.
- Prepare Mix-Ins: Chop the toffee candy and Lotus Biscoff cookies into small pieces. Combine these with salted peanuts and marshmallows in a large mixing bowl, ensuring the ingredients are evenly distributed.
- Combine: Pour the melted milk chocolate mixture over the bowl of mix-ins. Stir carefully to coat all the nuts, candies, cookies, and marshmallows thoroughly with the chocolate.
- Set: Line a 22 x 22 cm (8.66 x 8.66 in) dish with parchment paper. Spread the Rocky Road mixture evenly into the dish. If using, melt the white chocolate separately and drizzle it evenly over the top for decoration.
- Chill & Serve: Refrigerate the dish for at least 2 hours to allow the Rocky Road to set completely. Once firm, cut into squares or desired pieces and serve chilled for the best texture and flavor.
