Apple Filling

  • 6 Granny Smith apples, peeled, cored and chopped
  • 3 tablespoons butter
  • ¼ cup brown sugar
  • 1½ teaspoons ground cinnamon
  • 1½ teaspoons cornstarch
  • 2 teaspoons water (for cornstarch mix)

Pastry

  • 1 pound (450 grams) frozen or chilled puff pastry
  • 1 egg, beaten (for egg wash)

  • Powdered (icing) sugar

Instructions

  1. Prepare the Apple Filling: Peel, core, and chop the apples into small pieces. Place them in a frying pan with butter, brown sugar, and cinnamon. Heat over medium until the butter melts and the mixture begins to bubble.
  2. Simmer Apples: Reduce heat to low and simmer the apples for 10-15 minutes until they are just tender.
  3. Thicken Filling: Mix cornstarch with 2 teaspoons water and stir into the apple mixture. Cook until thickened. Add a little water if the filling becomes too thick. Then, transfer to a plate to cool.
  4. Preheat Oven & Prepare Pastry: Preheat the oven to 400°F (200°C) and line two baking trays with parchment paper. Defrost puff pastry until pliable, chilling again if it becomes too soft.
  5. Cut Pastry Squares: Cut each sheet of puff pastry into 5-inch by 5-inch (12cm x 12cm) squares.
  6. Fill Pastry: Spoon the cooled apple filling onto half of each pastry square.
  7. Seal Turnovers: Brush one edge of each pastry square lightly with egg wash. Fold pastry over the filling to form a triangle or square, pressing edges firmly to seal.
  8. Prepare for Baking: Place turnovers on the lined baking trays. Cut three slits in the top of each turnover to allow steam to escape. Brush the tops with egg wash.
  9. Bake: Bake in the preheated oven for 25-30 minutes until golden brown and crispy.
  10. Cool & Serve: Cool the turnovers on a wire rack, then dust with powdered sugar before serving.
