Pistachio Fudge Recipe

  • Author: Harry
  • Total Time: 3 to 4 hours (including chilling or setting time)
  • Yield: 16 to 25 squares 1x

Description

This Pistachio Fudge is a creamy, nutty treat combining smooth white chocolate, sweetened condensed milk, and instant pistachio pudding mix for a rich, melt-in-your-mouth texture. Chunky salted pistachios add a delightful crunch, making it a perfect indulgent dessert or snack that sets effortlessly with no baking required.

Ingredients

Scale

Fudge Base

  • 3 cups white chocolate chips (18 ounces)
  • 1 (14-ounce) can sweetened condensed milk
  • 1 (3.4-ounce) package JELLO instant pistachio pudding mix

Nuts

  • 1 1/2 cups salted pistachios (190 grams)

Instructions

  1. Prepare Pan: Line an 8-inch square baking pan with non-stick foil, parchment paper, or grease it well to ensure easy removal of the fudge later.
  2. Combine Chocolate and Condensed Milk: In a large microwave-safe bowl, add the white chocolate chips and sweetened condensed milk together.
  3. Microwave Mixture: Heat the bowl in the microwave at 70% power for 90 seconds. Let it sit for a couple of minutes to allow residual heat to soften the chocolate, then stir thoroughly until smooth. If chunks remain, microwave in additional 30-second intervals and stir until fully melted and silky.
  4. Add Pudding Mix and Pistachios: Stir in the dry JELLO instant pistachio pudding mix until fully incorporated. Then fold in the salted pistachios evenly throughout the mixture.
  5. Transfer to Pan: Pour the fudge mixture evenly into the prepared baking pan and spread it out smoothly.
  6. Set the Fudge: Allow the fudge to set at room temperature for several hours until firm, or accelerate setting by refrigerating it.
  7. Cut and Serve: Once set, cut the fudge into 16 or 25 squares, depending on the desired size.
  8. Storage: Store the fudge in an airtight container at room temperature or refrigerated for up to 2 weeks to maintain freshness.

Notes

  • Use high-quality white chocolate chips for the best flavor and smoothness.
  • For softer fudge, let it set at room temperature; refrigerate for a firmer texture.
  • Salted pistachios add a great contrast, but unsalted can be used if preferred.
  • This fudge does not require baking or stovetop cooking.
  • Cutting the fudge after it is completely set helps maintain clean squares.
