Peach Syrup
- 3 Ripe Peaches, pitted and sliced
- ½ – ¾ cup Granulated Sugar (adjust to taste)
- 2 teaspoons Lemon Juice
- 1 cup Water (for blending and syrup)
Tea
- 1.5 tablespoons Loose Leaf Black Tea (or 3 Tea Bags)
- 7 cups Water (for brewing tea)
For Serving
- Fresh Mint Sprigs
- Few Ice Cubes
- Thin Peach Slices
Instructions
- Prepare Peach Syrup: In a high-speed blender, combine sliced peaches, granulated sugar, lemon juice, and 1 cup of water. Blend until smooth to create a peach mixture.
- Cook Peach Syrup: Pour the peach mixture into a small saucepan and heat until it reaches a boil. Simmer for 30 seconds, then remove from heat to complete the homemade peach syrup.
- Strain Syrup (Optional): Transfer the syrup to a pitcher. If the syrup has pulp or peel bits, strain it through a fine mesh strainer for a smoother texture.
- Brew Black Tea: In a medium saucepan, bring the remaining 7 cups of water to a bubbly simmer. Add loose leaf black tea or tea bags and bring to a boil, then simmer gently for 2 minutes to avoid bitterness. For stronger tea, add more leaves and simmer an additional 2 minutes.
- Steep and Strain Tea: Turn off the heat and let the tea steep for 5-6 minutes. Strain out the tea leaves and pour the brewed tea into the pitcher containing the peach syrup. Stir well and refrigerate until chilled.
- Serve The Iced Tea: Place ice cubes, thin peach slices, and fresh mint sprigs into serving glasses. Stir and pour the chilled peach tea mixture into the glasses, then garnish as desired and serve immediately.
Notes
- Adjust the amount of sugar in the peach syrup to suit your desired sweetness.
- If you prefer a smoother syrup, straining after blending is recommended.
- Do not oversteep the black tea as it can become bitter.
