- 3 (11 oz) cans MexiCorn (sweet corn & diced red and green peppers), drained
- 1 (7 oz) can chopped green chiles
- 1 (6 oz) can chopped jalapeno peppers (drained, liquid reserved)
- 1/2 cup green onion, chopped
- 1 cup mayonnaise
- 1 cup sour cream
- 1 teaspoon black pepper
- 1/2 teaspoon garlic powder
- 1 (16 oz) package shredded sharp cheddar cheese
Serving
- 2–3 bags Fritos Scoops corn chips
Instructions
- Combine Ingredients: In a large bowl, thoroughly mix together the drained MexiCorn, chopped green chiles, drained jalapeno peppers (add jalapeno liquid to taste for desired heat level), chopped green onion, mayonnaise, sour cream, black pepper, garlic powder, and shredded sharp cheddar cheese until well blended.
- Chill the Dip: Cover the bowl and refrigerate the mixture for at least 2 hours or up to overnight to allow the flavors to meld and the dip to chill thoroughly.
- Serve: Serve the chilled corn dip with Fritos Scoops corn chips for scooping and enjoying as a delicious appetizer or snack.
