  • Author: Harry
  • Total Time: 1 hour 15 minutes
  • Yield: 16 bars 1x

Description

Delicious no-bake buckeye bars featuring a buttery graham cracker crust, a rich peanut butter filling, and a smooth chocolate topping. These bars are quick to prepare, require no oven, and are perfect for peanut butter and chocolate lovers looking for an easy treat.

Ingredients

Scale

Crust & Filling

  • 2 cups graham cracker crumbs (from 14 full rectangle crackers or 28 squares)
  • 1 cup butter, melted
  • 2 cups powdered sugar
  • 1 cup creamy peanut butter

Chocolate Topping

  • 2 cups chocolate chips
  • 2 heaping tablespoons creamy peanut butter

Instructions

  1. Prepare the Pan: Line a 9×9-inch pan with parchment paper, making sure it covers the bottom and sides for easy removal. Set aside.
  2. Make Graham Cracker Crumbs: Pulse the whole graham crackers in a food processor until they become fine crumbs.
  3. Mix Crust and Filling: In a large bowl, combine the 2 cups of graham cracker crumbs with melted butter, powdered sugar, and 1 cup of creamy peanut butter. Mix thoroughly until well blended into a sticky dough.
  4. Press into Pan: Evenly press the peanut butter crust mixture into the prepared 9×9-inch pan, creating a firm and level base.
  5. Melt Chocolate Topping: Place 2 cups of chocolate chips and 2 heaping tablespoons of creamy peanut butter into a microwave-safe bowl. Microwave in 30-second intervals, stirring well between each, until melted and smooth.
  6. Spread Chocolate Layer: Pour and spread the melted chocolate and peanut butter mixture evenly over the crust layer in the pan.
  7. Chill Bars: Place the pan in the refrigerator and chill for at least 1 hour to set the bars.
  8. Cut and Serve: Lift the bars out of the pan using the parchment paper. Cut into squares or bars with a sharp knife and serve immediately or keep refrigerate until ready to enjoy.

Notes

  • Use parchment paper to make removal and cutting easier.
  • Microwave the chocolate and peanut butter slowly in intervals to prevent burning.
  • Store leftover bars in an airtight container in the refrigerator for up to one week.
  • For a gluten-free option, substitute gluten-free graham crackers.
  • Chilling longer will make bars firmer and easier to cut.
