Instructions

  1. Make the Golden Oreo Crust: Crush the 24 Golden Oreo cookies along with their cream filling into fine crumbs using a food processor or by placing them in a sealed bag and rolling with a rolling pin. Stir in the 5 tablespoons of melted butter until the crumbs are fully coated. Press this mixture firmly into the base of a 9-inch springform pan, pie plate, or square pan. Chill the crust in the refrigerator while you prepare the filling to allow it to set.
  2. Make the Funfetti Cheesecake Filling: In a large mixing bowl, beat the softened cream cheese until smooth using an electric mixer or whisk. Add the powdered sugar, sour cream or Greek yogurt, and vanilla extract or vanilla bean paste, then continue beating until the mixture is creamy and smooth. Gently fold in 1 1/2 cups of whipped cream to maintain a light texture, followed by the chopped 10 Golden Oreo cookies and 1/2 cup of rainbow sprinkles. Mix carefully to evenly distribute ingredients without deflating the cream.
  3. Assemble the Cheesecake: Spread the cheesecake filling evenly over the chilled crust, smoothing the top with a spatula for a clean finish. Refrigerate the assembled cheesecake for at least 4 hours or preferably overnight until it is firm and set.
