Cookie Dough
- 1 cup (16 Tbsp; 226g) unsalted butter, softened to room temperature
- 3/4 cup (150g) granulated sugar
- 1 large egg, at room temperature
- 1 teaspoon pure vanilla extract
- 1 teaspoon almond extract
- 2 and 1/3 cups (291g) all-purpose flour (spooned & leveled)
- 1/2 teaspoon salt

Instructions
- Preheat Oven: Preheat your oven to 350°F (177°C) to ensure it’s at the perfect temperature for baking your spritz cookies.
- Prepare Baking Sheets: Line 2 or 3 large baking sheets with silicone baking mats or use nonstick baking sheets without liners. Chill these lined sheets if possible to help the dough stick better when pressed.
- Make the Dough: In a large bowl, cream the softened butter and granulated sugar together on medium-high speed using a handheld or stand mixer with a paddle attachment until smooth, about 3 minutes. Add the egg, vanilla, and almond extracts, and beat on high speed until combined, about 1 minute. Scrape down the bowl and beat again if needed.
- Incorporate Dry Ingredients: On low speed, add the flour and salt gradually, then increase to high speed and beat until fully combined, forming a consistent dough.
- Shape the Cookies: Fit your cookie press with a decorative plate according to the manufacturer’s directions. Fill the press with dough and hold it perpendicular to the cold, lined baking sheets. Press out cookies about 2 inches (5 cm) apart. Optionally, brush shapes lightly with water and decorate with sprinkles or press a chocolate chip in the center.
- Chill if Necessary: If the dough softens during shaping, refrigerate the shaped dough on the baking sheet for 10 minutes before baking to maintain shape.
- Bake: Bake the cookies in the preheated oven until the edges are very lightly browned, about 7–9 minutes.
- Cool: Remove from the oven and allow cookies to cool on the baking sheet for 5 minutes. Then transfer them to a wire rack to cool completely.
- Decorate: If desired, drizzle the cooled cookies with melted chocolate for an elegant finish.
- Store: Keep cookies fresh in an airtight container at room temperature for up to one week.

- Do not use parchment paper for the baking sheets as the pressed dough won’t adhere well.
