- 2 cups shredded Mexican cheese blend (Sargento brand, 8-ounce bag)
Instructions
- Prepare the base: Whisk together the mayonnaise, sour cream, and taco seasoning mix in a large bowl until the mixture is smooth and evenly combined, forming the creamy foundation of the dip.
- Add vegetables and cheese: Add the drained southwest corn with poblano and red peppers, chopped mild green chiles, sliced green onions, minced jalapeno, and shredded Mexican cheese blend to the bowl. Stir everything thoroughly until all ingredients are fully incorporated.
- Refrigerate the dip: Cover the bowl tightly with plastic wrap and refrigerate the dip for at least 2 hours, or up to overnight, allowing the flavors to meld and the dip to chill completely.
- Serve and garnish: Before serving, transfer the chilled dip to a serving bowl. Optionally garnish with additional sliced green onions, fresh chopped cilantro, crumbled cotija cheese, and a pinch of chili powder for extra flavor and presentation.
