Quesadilla Filling

- 1 small tomato, diced
- 1/4 cup red onion, thinly sliced

Instructions
- Prepare the filling: In a mixing bowl, combine the shredded mozzarella cheese, crumbled feta cheese, chopped spinach, diced tomato, thinly sliced red onion, and black pepper. Mix thoroughly to evenly distribute all ingredients.
- Assemble the quesadillas: Lay one flour tortilla flat on a clean surface. Spoon about one-fourth of the filling mixture onto half of the tortilla. Fold the other half over the filling to create a half-moon shape, pressing gently to seal.
- Heat the skillet: Place a non-stick skillet over medium heat and add the tablespoon of olive oil, allowing it to warm but not smoke.
- Cook the quesadilla: Carefully place the folded tortilla into the heated skillet. Cook for about 3 to 4 minutes until the underside turns golden brown and crispy.
- Flip and finish cooking: Using a spatula, carefully flip the quesadilla and cook the other side for an additional 3 to 4 minutes until it is also golden brown and the cheese inside has melted.
- Serve warm: Remove the quesadilla from the skillet, transfer to a plate, slice into wedges, and serve immediately while warm and melty.
