- Prepare the mint mixture: In a blender or food processor, combine the fresh mint leaves, fresh lemon juice, and a small amount of the water. Blend until the mint is finely chopped and well incorporated into the liquid.
- Mix with remaining water: Pour the blended mint and lemon mixture into a pitcher or bowl and add the remaining water. Stir well to combine all the flavors evenly.
- Freeze into ice cubes: Carefully pour the mixture into ice cube trays, filling each compartment. Place the trays in the freezer and freeze until solid, usually at least 4-6 hours or overnight for best results.
- Store and use: Once frozen, pop the lemon mint ice cubes out of the trays and store them in a resealable plastic bag or airtight container in the freezer. Use these ice cubes to add a refreshing minty lemon flavor to your beverages anytime.
