- 1 tablespoon cornstarch
- 2 tablespoons water (for cornstarch slurry)

Instructions
- Prepare Chia Pudding: In a medium bowl, combine 1/2 cup chia seeds, 1 cup plain Greek yogurt, 1/4 cup lemon juice, zest of 1 lemon, and 1/4 cup honey. Mix well to blend all ingredients thoroughly.
- Add Milk and Chill: Pour 1 cup of your choice of milk into the mixture and whisk until smooth. Cover the bowl and refrigerate for at least 2 to 4 hours, or preferably overnight, to allow the chia seeds to absorb the liquid and create a pudding-like consistency.
- Cook Blueberry Compote: In a saucepan over medium heat, combine 2 cups blueberries, 2 tablespoons honey, and 2 teaspoons lemon juice. Cook for about 10 minutes, stirring frequently. Meanwhile, in a small bowl, mix 1 tablespoon cornstarch with 2 tablespoons water to make a slurry. Add this slurry to the saucepan and stir well. Continue cooking for 1 to 2 minutes until the mixture thickens to a syrupy texture.
- Assemble the Pudding: In serving jars or glasses, layer the chia pudding and blueberry compote alternately. Optionally, add fresh blueberries between layers for added texture and freshness.
