Bread and Spreads
- 12 slices sandwich bread
- 4 tbsp mayonnaise, divided
- 1 tbsp prepared basil pesto
- 1 tbsp prepared sun-dried tomato pesto (or a couple of pureed sun-dried tomatoes)

- 1/2 lb shaved ham
- 1/2 lb shaved turkey

Instructions
- Toast the Bread: Toast all 12 slices of sandwich bread until they are lightly golden brown. This will add a satisfying crunch and help prevent sogginess when assembling the sandwich. Set the toasted bread aside.
- Cook the Bacon: Fry the halved bacon slices in a skillet over medium heat until they are just barely crisp. Avoid overcooking to retain some chewiness. Drain the cooked bacon on paper towels to remove excess grease and set aside.
- Prepare the Mayonnaise Mixtures: In one small bowl, combine 2 tablespoons of mayonnaise with the basil pesto. In another small bowl, mix the remaining 2 tablespoons of mayonnaise with the sun-dried tomato pesto or pureed sun-dried tomatoes. These mixtures add creamy, herbaceous layers of flavor.
- Assemble the First Layer: Spread the basil pesto mayonnaise on one side of two slices of bread. On one slice, layer shaved ham and then a few leaves of lettuce. On the other slice, layer avocado slices topped with bacon strips. Carefully place the avocado and bacon slice, mayonnaise side down, on top of the ham and lettuce slice to form the first double layer.
- Add the Second Layer: Spread sun-dried tomato pesto mayonnaise on the top slice from the first layer. Add shaved turkey and lettuce on top of this spread. Next, take a third slice of bread, spread one side with sun-dried tomato pesto mayonnaise, and layer with the remaining avocado slices, bacon strips, and a slice of cheese. Place this slice, ingredient side down, on top of the turkey and lettuce layer. Repeat the process for additional sandwiches as needed.
- Serve: Using a sharp knife, cut each sandwich in half diagonally, then cut each half into quarters, creating manageable portions. Serve the sandwiches alongside potato chips for a delightful crunch and easy meal.
