Ingredients

Scale

Strawberry Layer

  • 5.5 ounces frozen strawberries
  • 1 teaspoon water
  • 1 tablespoon Swerve Confectioners (optional)
  • 1 teaspoon ground chia seeds (optional, for thickening)

Base

  • 1/2 cup ground almonds
  • 1 tablespoon melted butter
  • 1/2 tablespoon Swerve Confectioners
  • 1/4 teaspoon vanilla extract

Filling

  • 1/2 cup full-fat soft cream cheese (or mascarpone)
  • 1.5 tablespoons Swerve Confectioners
  • 1/2 teaspoon vanilla extract
  • 1/2 cup heavy cream

Garnish

  • 4 fresh strawberries, for topping

Instructions

  1. Prepare the Strawberry Layer: Place the frozen strawberries, water, and optional sweetener in a non-stick pan. Simmer on medium-low heat for 3 to 5 minutes, stirring regularly, until the mixture thickens. Use a spatula to gently squash the strawberries to release more juice. If you want a thicker jam-like consistency, stir in ground chia seeds after turning off the heat. Let the mixture cool completely; refrigerate to speed this step if desired.
  2. Make the Base: Combine ground almonds, melted butter, sweetener, and vanilla in a bowl. Use your fingers to press and mix the ingredients into a crumbly texture that can be packed firmly when layered.
  3. Prepare the Filling: In a mixing bowl, whisk together the cream cheese, sweetener, and vanilla until smooth using a hand whisk. In a separate clean bowl, whip the heavy cream until just below stiff peaks form. Gently fold the whipped cream into the cream cheese mixture with a spatula until well combined. Adjust sweetness to your taste.
  4. Assemble the Jars: Start by layering the almond crumb base at the bottom of your serving jars, reserving a small amount for topping. Add the creamy filling next, smoothing it out. Spoon the cooled strawberry compote over the filling layer. Finish with the remaining crumb base on top, and garnish with fresh strawberries for presentation.

Notes

  • Using frozen strawberries is convenient and provides consistent flavor year-round.
  • The ground chia seeds are optional but help thicken the strawberry layer for a jammy texture.
  • Swerve Confectioners is a low-carb sweetener alternative; feel free to substitute with erythritol or another keto-friendly sweetener.
  • Ensure cream cheese is softened for easier mixing and a smoother filling texture.
  • Refrigerate the jars for at least an hour before serving to let the layers set well.
