  • 24 caramel squares
  • 24 round vanilla wafer cookies
  • 2 cups semi-sweet chocolate chips

Instructions

  1. Preheat and soften caramels: Preheat your oven to 250°F. Unwrap the caramel squares and place them a few inches apart on a parchment-lined baking sheet. Put the sheet in the middle rack of the oven for 5 minutes to soften the caramels without melting them, allowing you to reshape later.
  2. Prepare cookie base: Arrange the vanilla wafer cookies bottom side up on a small parchment-lined sheet pan that fits in your freezer. This will serve as the base for the bites.
  3. Shape caramels: Remove the caramels from the oven and, while still warm, flatten each caramel slightly into a circle that matches the size of the wafer cookies. Place each flattened caramel on top of its corresponding cookie on the sheet pan.
  4. Flash freeze the bites: Transfer the sheet pan with the assembled cookie and caramel pieces into the freezer and flash freeze for 15 minutes to firm them up for coating.
  5. Melt chocolate: When ready to coat, place 1 cup of semi-sweet chocolate chips into a microwave-safe bowl. Microwave in 30-second intervals, stirring between each, until the chocolate is fully melted and smooth.
  6. Coat bites with chocolate (first half): Remove half of the frozen bites from the freezer. Using a fork, dip and completely coat each bite in the melted chocolate. Let excess chocolate drip back into the bowl, then transfer coated bites to a parchment-lined sheet pan.
  7. Coat bites with chocolate (second half): Repeat the melting process with the remaining 1 cup of chocolate chips and coat the remaining frozen bites in chocolate, placing coated pieces back on parchment-lined sheet pan.
  8. Set the chocolate: Allow the chocolate-coated bites to set at room temperature until the chocolate is fully hardened.
  9. Storage: Store the completed Twix Bites in an airtight container at room temperature for up to 2 weeks to maintain freshness.
