  • Author: Harry
  • Total Time: 35 minutes
  • Yield: About 4 to 5 cups 1x
  • Diet: Vegetarian

Description

A festive and flavorful Holiday Gingerbread Granola combining warm spices like cinnamon, ginger, and cloves with the natural sweetness of maple syrup and molasses. Perfect for a cozy breakfast or a snack during the holiday season.

Ingredients

Scale

Dry Ingredients

  • 3 cups rolled oats
  • 1/2 cup nuts of choice
  • 1 tablespoon ground cinnamon
  • 3/4 teaspoon ground ginger
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon sea salt

Wet Ingredients

  • 1/4 cup coconut oil
  • 8 tablespoons maple syrup
  • 2 tablespoons unsulphured molasses
  • Splash of vanilla extract

Instructions

  1. Preheat the Oven: Preheat your oven to 325°F (163°C) and line a large baking sheet with parchment paper or a silicone liner to prevent sticking.
  2. Mix Ingredients: In a large mixing bowl, combine the rolled oats, nuts, ground cinnamon, ginger, cloves, and sea salt. In a separate small bowl or measuring cup, whisk together coconut oil, maple syrup, molasses, and vanilla extract until well blended.
  3. Combine Wet and Dry: Pour the wet ingredient mixture over the dry ingredients and stir thoroughly until the oats and nuts are evenly coated.
  4. Press and Bake: Transfer the granola mixture onto the prepared baking sheet. Use a spatula to press the granola firmly into an even layer, helping it stick together as it bakes.
  5. Bake: Place the baking sheet in the preheated oven and bake for 20 minutes. Halfway through, check to ensure even baking and gently press again if needed.
  6. Cool and Harden: Remove from oven and allow the granola to cool on the baking sheet for 15 minutes. This cooling step lets it harden and makes it easier to break into chunks.
  7. Break and Store: Once cooled, break the granola into pieces of your desired size and store them in an airtight container to maintain freshness.

Notes

  • Feel free to substitute the nuts with your favorite choice such as almonds, pecans, or walnuts.
  • For a gluten-free version, ensure rolled oats are certified gluten-free.
  • You can customize sweetness by adjusting the amount of maple syrup or molasses.
  • Store the granola in an airtight jar at room temperature for up to two weeks.
  • This granola makes a great topping for yogurt, smoothie bowls, or ice cream.
