- Mix dry ingredients: In a small bowl, whisk together the all-purpose flour, vanilla protein powder, baking powder, and a pinch of kosher salt until evenly combined.
- Add wet ingredients and mix: Add the large egg, 2 tablespoons of plain whole milk Greek yogurt, honey, and finely grated lemon zest to the dry mixture. Mix thoroughly to form a smooth batter. Then, gently fold in 6 of the fresh raspberries.
- Prepare mug: Lightly spray a large microwave-safe mug with cooking spray to prevent sticking. Pour the prepared batter into the mug evenly.
- First microwave session: Microwave the batter for 30 seconds. Then, use a fork to carefully smash the remaining 4 raspberries and arrange them on top of the batter, creating a nice raspberry topping.
- Finish microwaving: Continue microwaving the mug cake for about 30 seconds more, or until the cake begins to pull away from the sides of the mug and the top appears dry. If the top is still wet, microwave in additional 10-second increments until cooked through. Allow the mug cake to cool slightly before serving.
- Serve: Top the mug cake with extra Greek yogurt and additional fresh raspberries to enhance flavor and presentation. Enjoy immediately.
