Chocolate Base

  • 6 oz. dark chocolate or semisweet chocolate chips

  • 1 tbsp. slivered almonds
  • 1 tsp. gold sprinkles or white sparkling sugar
  • 1/2 tsp. coarse Himalayan sea salt

Instructions

  1. Prepare the pans: Lightly brush a nonstick 24-cup or 2 (12-cup) mini cupcake pans with neutral oil to prevent the chocolate from sticking.
  2. Melt the chocolate: In a small heatproof bowl, microwave the chocolate in 20-second increments, stirring between each session until the chocolate is melted and smooth. Alternatively, melt the chocolate using a double boiler for better temperature control.
  3. Fill and decorate: Pour about 1 to 1 1/2 teaspoons of melted chocolate into each prepared cupcake cup. Tap the pan gently to evenly distribute the chocolate. Sprinkle your choice of dried apricot strips, slivered almonds, gold sprinkles, or a pinch of coarse Himalayan sea salt on top.
  4. Chill the gelt: Place the pan in the refrigerator for approximately 10 minutes or until the chocolate is fully set and chilled.
  5. Unmold and serve: Once chilled, turn the pan upside down onto a cutting board and gently tap the back of each cup to release the gelt. Serve immediately or wrap individually in foil for gifting or later enjoyment.

  • Use high-quality dark or semisweet chocolate for the best flavor and texture.
  • Optional toppings can be mixed and matched based on preference or omitted entirely for plain chocolate gelt.
