Ingredients

Scale

Meat

  • 1 lb ground turkey

Vegetables

  • 2 medium sweet potatoes, peeled and chopped
  • 2 small zucchini, sliced and quartered

Dairy

  • 2/3 cup shredded parmesan cheese

Seasonings & Oils

  • 1 1/2 tsp garlic powder (divided)
  • 1 tsp rosemary (divided)
  • 5 tbsp olive oil (divided)
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Preheat Oven: Set the oven to 400 degrees Fahrenheit to prepare for roasting the ingredients evenly.
  2. Prepare Sweet Potatoes: Peel and chop the sweet potatoes, then place them in a large baking dish. Toss with 2 tablespoons of olive oil, 1/2 teaspoon garlic powder, 1/2 teaspoon rosemary, salt, and pepper to evenly coat the potatoes with seasoning and oil.
  3. Bake Sweet Potatoes: Bake the sweet potatoes in the preheated oven for 30 minutes, allowing them to soften and begin roasting.
  4. Cook Ground Turkey: While the sweet potatoes bake, heat 1 tablespoon of olive oil in a pan over medium heat. Brown the ground turkey, seasoning it with 1 teaspoon garlic powder, 1/2 teaspoon rosemary, salt, and pepper. Cook until fully browned and cooked through.
  5. Prepare Zucchini: Slice the zucchini and cut each slice into quarters to create bite-sized pieces for mixing.
  6. Combine Ingredients: Remove the baked sweet potatoes from the oven. Add the cooked ground turkey and chopped zucchini to the baking dish. Stir gently to combine all the ingredients.
  7. Bake Combined Dish: Return the dish to the oven and bake for an additional 10 minutes to let the flavors meld and zucchini soften slightly.
  8. Add Olive Oil and Cheese: Remove the dish from the oven again, drizzle with the remaining 2 tablespoons of olive oil, combine well, and sprinkle the shredded parmesan cheese evenly over the top.
  9. Final Bake: Bake once more for 10 minutes, allowing the cheese to melt and form a delicious golden crust.
  10. Serve and Enjoy: Remove from the oven and serve warm as a hearty and nutritious meal.
