- 2/3 cup shredded parmesan cheese
Seasonings & Oils
- 1 1/2 tsp garlic powder (divided)
- 1 tsp rosemary (divided)
- 5 tbsp olive oil (divided)
- Salt, to taste
- Black pepper, to taste
Instructions
- Preheat Oven: Set the oven to 400 degrees Fahrenheit to prepare for roasting the ingredients evenly.
- Prepare Sweet Potatoes: Peel and chop the sweet potatoes, then place them in a large baking dish. Toss with 2 tablespoons of olive oil, 1/2 teaspoon garlic powder, 1/2 teaspoon rosemary, salt, and pepper to evenly coat the potatoes with seasoning and oil.
- Bake Sweet Potatoes: Bake the sweet potatoes in the preheated oven for 30 minutes, allowing them to soften and begin roasting.
- Cook Ground Turkey: While the sweet potatoes bake, heat 1 tablespoon of olive oil in a pan over medium heat. Brown the ground turkey, seasoning it with 1 teaspoon garlic powder, 1/2 teaspoon rosemary, salt, and pepper. Cook until fully browned and cooked through.
- Prepare Zucchini: Slice the zucchini and cut each slice into quarters to create bite-sized pieces for mixing.
- Combine Ingredients: Remove the baked sweet potatoes from the oven. Add the cooked ground turkey and chopped zucchini to the baking dish. Stir gently to combine all the ingredients.
- Bake Combined Dish: Return the dish to the oven and bake for an additional 10 minutes to let the flavors meld and zucchini soften slightly.
- Add Olive Oil and Cheese: Remove the dish from the oven again, drizzle with the remaining 2 tablespoons of olive oil, combine well, and sprinkle the shredded parmesan cheese evenly over the top.
- Final Bake: Bake once more for 10 minutes, allowing the cheese to melt and form a delicious golden crust.
- Serve and Enjoy: Remove from the oven and serve warm as a hearty and nutritious meal.
