Ingredients
Scale
Vegetables
- 2 tablespoons avocado oil
- 1/2 large yellow onion, chopped
- 1 green bell pepper, chopped
- 5 cups cubed sweet potatoes
- 3 garlic cloves, minced
Meat
- 1 pound turkey sausage
Egg Mixture
- 10 eggs
- 1/2 cup milk (plant-based milk can be substituted)
- 1 teaspoon dried thyme
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1/2 cup grated mozzarella cheese
Instructions
- Preheat Oven and Prepare the Baking Dish: Preheat your oven to 350°F (175°C). While the oven heats, chop all your vegetables. Grease a 9×13-inch casserole dish to prevent sticking during baking.
- Cook the Vegetables: Heat avocado oil in a Dutch oven or large saucepan until hot. Add chopped onion, green bell pepper, and sweet potatoes. Sauté for 8-9 minutes, stirring occasionally until the vegetables start to soften. In the last 1-2 minutes, add the minced garlic and cook briefly. Remove the vegetables and spread evenly in the prepared casserole dish.
- Cook the Sausage: In the same pan, add the turkey sausage and cook thoroughly, breaking it into small pieces as it cooks. Once fully cooked, add the sausage to the vegetables in the casserole dish and mix well.
- Prepare the Egg Mixture: In a separate bowl, whisk together the eggs, milk, dried thyme, salt, pepper, and grated mozzarella until smooth and well combined, forming the egg mixture.
- Combine and Bake: Pour the egg mixture evenly over the vegetable and sausage combination in the casserole dish. Gently stir to evenly distribute the egg mixture. Place the casserole in the preheated oven and bake for 40-45 minutes, or until the center is firm. If the top browns too quickly, cover loosely with foil halfway through baking to prevent burning.
- Cool and Serve: Remove the casserole from the oven once baked and let it cool for about 15 minutes to allow the flavors to meld and make it easier to cut. Serve warm and enjoy this delicious and hearty breakfast casserole.
Notes
- Plant-based milk can be used as a substitute for dairy milk in the egg mixture to make it dairy-free.
- Swapping turkey sausage for a vegetarian alternative can turn this into a vegetarian-friendly dish.
- Cover the casserole with foil midway through baking if the top begins to brown too quickly.
- Allowing the casserole to rest after baking improves slicing and the melding of flavors.
- This casserole can be prepared the night before and baked fresh in the morning for convenience.
