  • Author: Harry
  • Total Time: 40 minutes
  • Yield: 16-24 sandwich cookies (32-48 individual cookies) 1x

Description

These Easy Dulce de Leche Cinnamon Sandwich Cookies combine soft, cinnamon-coated cookie dough balls baked to golden perfection, then sandwiched with a rich and silky dulce de leche filling. The slight crunch of cinnamon sugar on the outside pairs beautifully with the creamy caramel center, making these cookies an irresistible treat perfect for any occasion.

Ingredients

Scale

Cookie Dough

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 2 tsp vanilla extract
  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt

Cinnamon Sugar Coating

  • 1/2 cup granulated sugar
  • 2 tsp ground cinnamon
  • 1 tbsp butter (for melting with dulce de leche)

Filling

  • 1 can (13.4 oz) dulce de leche (such as Nestle Dulce de Lechera)

Instructions

  1. Prepare Cookie Dough: In a large mixing bowl, cream together the softened butter and 1 cup granulated sugar for about 4 minutes until light and fluffy. Add the egg and vanilla extract and mix for another minute until fully incorporated. Gradually stir in the all-purpose flour, baking soda, and salt until a dough forms. Chill the dough in the refrigerator for 10-15 minutes to make it easier to handle.
  2. Make Cinnamon Sugar Coating: While the dough chills, mix 1/2 cup granulated sugar with 2 teaspoons ground cinnamon in a shallow bowl to create the coating.
  3. Form and Coat Cookies: Roll chilled dough into 16 to 24 balls, depending on desired cookie size. Dip each ball into the cinnamon-sugar mixture, coating well, then place onto a parchment- or Silpat-lined baking sheet.
  4. Bake Cookies: Bake the coated cookie dough balls in a preheated 350°F (175°C) oven for 9 to 11 minutes, until edges are lightly golden but centers remain soft. Sprinkle with remaining cinnamon sugar immediately after baking for extra flavor and a lovely finish.
  5. Prepare Dulce de Leche Filling: While cookies cool, melt 1 tablespoon butter in a small saucepan over low heat. Remove from heat and stir in the entire can of dulce de leche until smooth and silky.
  6. Assemble Sandwich Cookies: Once cookies are completely cool, spread a layer of dulce de leche filling on the bottom of one cookie and top with another cookie to form a sandwich. Repeat with remaining cookies.
  7. Rest for Flavor: For best results, let the assembled sandwich cookies rest for about an hour to allow the filling to set and flavors to meld.

Notes

  • Chilling the dough helps prevent spreading and makes rolling easier.
  • Use a silicone baking mat or parchment paper to avoid sticking.
  • The butter added to the dulce de leche filling enhances its texture, making it silkier and easier to spread.
  • Adjust size and number of cookies depending on preference; smaller cookies yield more sandwiches.
  • Allow cookies to cool completely before assembling to avoid melting the filling.
  • Store sandwich cookies in an airtight container at room temperature for up to 3 days or refrigerate for longer freshness.
