Peppered Honey

Fried Brie
- 1 wheel Brie (8–10 ounces)
- 1 large egg, beaten
- ½ cup panko breadcrumbs

- 2 cups mixed olives, pitted

Instructions
- Prepare the Peppered Honey: Mix the honey and black pepper together in a small jar. Set aside to allow the flavors to meld while you prepare the rest of the dish.
- Bread the Brie: Place the beaten egg in one shallow bowl and the panko breadcrumbs in another. Dip the Brie wheel into the egg, allowing any excess to drip off. Then press it thoroughly into the panko until fully coated. Freeze the coated Brie for 15–20 minutes; this helps it hold its shape during frying.
- Crisp the Prosciutto: Heat a dry skillet over medium heat. Add the prosciutto slices and cook until they are crisp around the edges. Remove the prosciutto and transfer to a plate to cool slightly, then tear into pieces for garnish.
- Fry the Olives: Using the same skillet, heat ¼ cup of olive oil over medium heat. Add the pitted mixed olives and a pinch of crushed red pepper flakes. Cook for about 5 minutes, stirring occasionally. Then stir in the lemon zest, capers, and fresh thyme leaves. Continue cooking another 5 minutes until the lemon zest is lightly golden. Remove and transfer the olive mixture to a bowl.
- Fry the Brie: Add the remaining ¼ cup olive oil to the skillet and heat over medium heat. Place the chilled Brie wheel into the hot oil and cook for 2–3 minutes per side, until golden brown and crispy. If the Brie cracks during cooking, don’t worry as it will still develop a beautiful crisp crust. Remove the Brie and transfer it to a serving plate.
- Serve: Top the warm fried Brie with the lemon-herb olive mixture, crispy prosciutto pieces, a generous drizzle of the peppered honey, fresh thyme leaves, and an extra sprinkle of black pepper. Serve immediately alongside crackers or warm sliced bread for dipping and indulgence.
