- Salt (to taste, approximately 2 tsp for boiling plus extra for seasoning)
- 2 Tbsp fresh parsley (finely chopped)
Instructions
- Boil the Potatoes: Bring a pot of water to a boil over high heat and add 2 teaspoons of salt. Wash and dry the baby gold potatoes thoroughly. Add the potatoes to the boiling water and cook for 15 to 25 minutes, depending on their size, until they are fully cooked and fork-tender.
- Drain and Cool: Drain the cooked potatoes in a colander and allow them to sit for 5 minutes so they are cool enough to handle safely.
- Preheat Air Fryer: Preheat your air fryer to 400°F (204°C). Lightly coat the air fryer basket with non-stick spray or olive oil to prevent sticking.
- Smash the Potatoes: Transfer the potatoes to a large sheet pan or flat surface. Using the bottom of a cup or a serving fork, gently press down on each potato to flatten it as thin as possible without breaking it apart. The thinner the potatoes, the crispier they will become.
- Season: Drizzle the smashed potatoes first with melted butter, then with olive oil. Sprinkle the potatoes evenly with garlic powder, black pepper, and about 1/2 teaspoon of salt. Be generous with seasoning for the best flavor.
- Arrange for Air Frying: Using a spatula, carefully place the smashed potatoes one by one into the preheated air fryer basket. Ensure that they do not overlap to allow proper crisping.
- Air Fry: Cook the potatoes in the air fryer at 400°F for 15 to 20 minutes until they are golden brown and super crispy. Do not flip the potatoes during cooking.
- Serve: Once cooked, transfer the crispy smashed potatoes to a serving dish. Garnish with finely chopped fresh parsley and optional flaky sea salt. Serve hot for the best texture and flavor.
