Mascarpone Mixture

- 2 cup Heavy cream (cold)

- 2 cups Coffee (espresso or strong coffee, cooled)

Instructions
- Prepare Coffee: Brew the espresso or strong coffee and let it cool for a few minutes. Set aside to be used for dipping ladyfingers.
- Mix Mascarpone Base: In a large mixing bowl, combine the mascarpone cheese, brown sugar, granulated sugar, kosher salt, and pumpkin pie spice. Use an electric hand mixer to blend these ingredients until the mixture is smooth and fully combined.
- Add Pumpkin Puree: Stir in the pumpkin puree into the mascarpone mixture until everything is evenly incorporated and the mixture is creamy.
- Whip Cream: Add the cold heavy cream to the pumpkin mascarpone mixture. Mix using an electric mixer for 3-4 minutes until the filling thickens to a fluffy, stable texture.
- Soak Ladyfingers: Quickly dip each ladyfinger into the cooled coffee for 1-2 seconds—just enough to soak but not soggy. Arrange a single even layer of these soaked ladyfingers in the bottom of a 13 by 9 inch baking dish.
- Layer Cream: Spread half of the mascarpone pumpkin cream evenly over the first ladyfinger layer using a spatula.
- Add Second Layer: Dip the remaining ladyfingers and lay them in a second layer on top of the cream layer.
- Pipe Remaining Cream: Place the rest of the mascarpone pumpkin mixture into a piping bag fitted with a star tip and pipe dollops evenly over the second ladyfinger layer to create an attractive textured surface.
- Chill: Cover the assembled tiramisu with plastic wrap and refrigerate for at least 4 hours to allow the flavors to meld and the ladyfingers to soften properly.
