Instructions

  2. Fold in the Crab Meat: Gently fold the lump crab meat into the mayonnaise mixture, being careful not to break up the crab too much, ensuring the mixture is evenly combined without shredding the crab.
  3. Wrap the Egg Rolls: Lay an egg roll wrapper on a clean surface in a diamond shape. Spoon approximately 2 tablespoons of the crab mixture onto the lower half of the wrapper. Fold the bottom corner over the filling, then fold in the sides tightly and roll the wrapper up to seal the mixture inside. Use a dab of water to seal the final corner securely.
  4. Heat the Oil: Heat vegetable oil in a deep fryer or a large pot to 350°F (175°C). Ensure there is enough oil for the egg rolls to float freely for even frying.
