Cloud Bread Sandwiches with Cream Cheese & Herbs Recipe

  • Author: Harry
  • Total Time: 30 minutes
  • Yield: 8 cloud bread rounds 1x
  • Diet: Gluten Free

Description

Light and airy cloud bread sandwiches made with whipped eggs and cream cheese, enhanced with fresh herbs. These low-carb, gluten-free sandwich rounds are perfect for a healthy and delicious meal, filled with your favorite sandwich ingredients like turkey, tomato, and arugula.

Ingredients

Scale

Cloud Bread

  • 3 large eggs (separated)
  • 3 oz cream cheese (softened)
  • 2 tbsp fresh chopped herbs (chives, parsley)
  • Pinch salt

Sandwich Fillings

  • Turkey slices
  • Tomato slices
  • Arugula leaves

Instructions

  1. Prepare Oven and Baking Sheet: Preheat your oven to 300 °F (150 °C). Line a baking sheet with parchment paper to ensure the cloud bread doesn’t stick during baking.
  2. Whip Egg Whites: In a clean bowl, beat the egg whites with a pinch of salt until stiff peaks form. This means when you lift the whisk, peaks will stand upright without folding over.
  3. Mix Egg Yolks and Cream Cheese: In a separate bowl, vigorously whip the egg yolks together with the softened cream cheese until the mixture becomes smooth and creamy without lumps.
  4. Fold Mixtures Together: Gently fold the stiff egg whites into the cream cheese and yolk mixture. Use a spatula to combine them carefully so as not to deflate the airy whites, maintaining the light texture.
  5. Form Cloud Bread Rounds: Spoon the batter onto the prepared baking sheet, creating eight round mounds. Aim for uniform size to ensure even baking.
  6. Bake: Place the tray in the preheated oven and bake for about 20 minutes or until the cloud breads turn golden on top and are set.
  7. Cool and Assemble Sandwiches: Allow the cloud breads to cool slightly on a wire rack to firm up. Then slice horizontally if desired and layer with your choice of sandwich fillings such as turkey, tomato slices, and fresh arugula. Serve immediately for best texture.

Notes

  • For best results, separate eggs when they are cold but whip the whites at room temperature.
  • Be gentle when folding the egg whites in to retain maximum fluffiness.
  • You can customize fillings to suit dietary preferences or seasonal ingredients.
  • Cloud bread is delicate; handle gently to avoid breakage.
  • Store leftovers in an airtight container and consume within 1-2 days for freshness.
