Instructions
- Prepare Crust: In a mixing bowl, combine the crushed graham crackers, toasted pecans, melted butter, and sugar thoroughly. Press this mixture firmly into the bottom of a 9×13-inch pan until an even crust forms. Place the pan in the refrigerator to chill for at least 30 minutes to set the crust.
- Make Filling: In a separate bowl, beat the cream cheese until smooth. Gradually add powdered sugar, vanilla extract, and lemon juice, continuing to beat until the mixture is creamy and well combined. Gently fold in 1 ½ cups of whipped topping until evenly incorporated. Spread this creamy mixture evenly over the chilled crust.
- Add Topping: Carefully spoon the cherry pie filling evenly over the cream cheese layer. Then spread the remaining 2 cups of whipped topping over the cherries to create a smooth top layer.
- Garnish & Chill: Sprinkle the top with chopped toasted pecans and garnish with fresh cherries if desired. Cover the dish and refrigerate for at least 4 hours, preferably overnight, to allow the dessert to set and flavors to meld well before serving.
