Instructions
- Cook the Pasta: In a large pot of boiling salted water, cook the fusilli pasta according to package directions until al dente, stirring occasionally to prevent sticking. Once cooked, reserve ½ cup of the pasta water for later, then drain the pasta thoroughly.
- Prepare the Cheese Sauce: While the pasta cooks, heat the evaporated milk in a large saucepan over medium-low heat until it just begins to simmer. Add the Garlic & Herb Boursin cheese and stir continuously until it melts completely and the mixture is well combined, approximately 3 minutes. Keep the sauce at a gentle simmer, stirring occasionally, until it thickens slightly and becomes glossy, about 2 to 3 minutes more. Season with ½ teaspoon kosher salt.
- Combine Pasta and Sauce: Add the cooked pasta back into the saucepan with the cheese sauce. Pour in a splash of the reserved pasta water and gently stir over medium-low heat, adding more pasta water as needed. Continue stirring until the sauce evenly coats the pasta and has your desired consistency. Taste and adjust seasoning by adding more salt if necessary.
