Ingredients
Scale
Dry Ingredients
- 1 cup all-purpose flour (spooned and leveled)
- ¾ cup cane sugar (plus more for sprinkling)
- 1½ teaspoons baking powder
- ½ teaspoon sea salt
Wet Ingredients
- 1 cup milk
- 4 tablespoons unsalted butter (melted, plus more for the baking dish)
- 1 teaspoon vanilla extract
Fruit
- Heaping 2 cups blackberries
To Serve
- Vanilla ice cream
Instructions
- Preheat Oven and Prepare Dish: Preheat your oven to 350°F (175°C) and generously butter an 8×8-inch baking dish or one of similar size to prevent sticking.
- Mix Dry Ingredients: In a large bowl, whisk together the all-purpose flour, cane sugar, baking powder, and sea salt until evenly combined.
- Add Wet Ingredients: Pour in the milk, melted unsalted butter, and vanilla extract into the dry ingredients and whisk thoroughly until the batter is smooth and well blended.
- Assemble Cobbler: Pour the batter evenly into the prepared baking dish. Distribute the blackberries evenly on top of the batter. Sprinkle additional cane sugar over the berries to enhance sweetness and create a slight crust.
- Bake: Place the baking dish in the preheated oven and bake for 50 to 65 minutes. The cobbler is ready when the edges turn a deep golden brown and the center is puffed and just set, not jiggly.
- Cool and Serve: Allow the cobbler to cool for a few minutes for easier serving. Serve warm with scoops of creamy vanilla ice cream for the best taste experience.
Notes
- For a more tart flavor contrast, substitute some blackberries with fresh raspberries or blueberries.
- Make sure not to overmix the batter to keep it tender and light.
- Use fresh blackberries for best taste, but frozen blackberries can also be used; just thaw and drain excess juice before adding.
- If you prefer a crisper topping, sprinkle a little extra sugar on the batter edges before baking.
- Store leftovers covered in the refrigerator and consume within 2 days. Reheat gently before serving.
