For the Crispy Corn

  • 2 cups Sweet Corn (frozen or fresh)
  • 2 tbsp Cornstarch
  • 2 tbsp All Purpose Flour (Plain flour)
  • 2 tbsp Rice Flour
  • ½ tsp Salt (to taste)
  • ½ tsp Black Pepper Powder
  • Refined Sunflower Oil (for deep frying)

For the Seasoning and Garnish

  • 1 tbsp Peri Peri Seasoning
  • 1 medium Onion (peeled & finely chopped)
  • 1 Green Chilli (finely chopped)
  • 3 tbsp Coriander Leaves (finely chopped)
  • 2 tsp Lemon Juice

Instructions

  1. Prepare the Corn: If using frozen sweet corn, microwave it for 1 minute to thaw and partially cook. If using fresh corn, boil it in water for 4 to 5 minutes, then strain thoroughly to remove all water.
  2. Coat the Corn: Place the drained corn in a bowl and add salt, black pepper powder, rice flour, plain flour, and cornstarch. Toss thoroughly to evenly coat the kernels. Transfer the coated corn into a fine mesh sieve and shake well to remove any excess flour.
  3. Deep Fry the Corn: Heat enough refined sunflower oil in a deep pan or wok until it becomes super hot. Carefully drop the coated sweet corn into the hot oil. Avoid stirring immediately; let it fry over high heat for about 1 minute until bubbles subside. Continue frying for 3 to 4 more minutes or until the corn turns golden brown and becomes super crispy.
  4. Drain the Excess Oil: Remove the fried corn from the oil using a slotted spoon and place it on paper towels to absorb excess oil. Then transfer back to a clean bowl or sieve.
  5. Toss with Seasonings: Add peri peri seasoning, finely chopped onions, green chillies, coriander leaves, and lemon juice to the hot crispy corn. Toss everything well to coat the corn evenly with the fresh and spicy flavors.
  6. Serve Immediately: Serve the crispy corn hot to enjoy its crunchy texture, as it tends to lose crispiness when it cools down.
