  • ¾ cup Parmesan (finely grated, divided)

Instructions

  1. Preheat Oven: Preheat your oven to 425°F to ensure it reaches the perfect temperature for baking crispy fries.
  2. Prep the Potatoes: Rinse and scrub the russet potatoes thoroughly to remove any dirt, then dry them completely. Cut the potatoes into matchstick slices, about ¼ to ½-inch thick. Place the potato slices in a large bowl and drizzle with olive or avocado oil. Toss to coat evenly, then sprinkle with 1 teaspoon salt and ½ teaspoon black pepper. Toss again until well combined.
  3. Bake the Fries: Line a large baker’s half sheet pan with parchment paper or use two regular-sized baking sheets. Spread the potato slices in a single layer on the pan(s), making sure fries are not touching to promote crispiness. Sprinkle ¼ cup of the Parmesan cheese evenly over the fries.
