Potato Fries
- 2 pounds russet potatoes

Garlic Parmesan Topping

- 2 cloves garlic (finely minced)
- ¾ cup Parmesan (finely grated, divided)
- ¼ cup parsley (fresh, finely chopped)
Instructions
- Preheat Oven: Preheat your oven to 425°F to ensure it reaches the perfect temperature for baking crispy fries.
- Prep the Potatoes: Rinse and scrub the russet potatoes thoroughly to remove any dirt, then dry them completely. Cut the potatoes into matchstick slices, about ¼ to ½-inch thick. Place the potato slices in a large bowl and drizzle with olive or avocado oil. Toss to coat evenly, then sprinkle with 1 teaspoon salt and ½ teaspoon black pepper. Toss again until well combined.
- Bake the Fries: Line a large baker’s half sheet pan with parchment paper or use two regular-sized baking sheets. Spread the potato slices in a single layer on the pan(s), making sure fries are not touching to promote crispiness. Sprinkle ¼ cup of the Parmesan cheese evenly over the fries. Bake in the preheated oven for 35-40 minutes, flipping the fries halfway through baking. After flipping, sprinkle an additional ¼ cup Parmesan cheese and reshape into a single layer for even cooking.
- Make the Garlic Butter: During the last five minutes of baking, heat the butter and minced garlic in a small saucepan over medium heat. Stir constantly for 1-2 minutes until the garlic begins to brown, then remove the pan from heat to avoid burning.
- Season and Serve: Once fries are baked, transfer them back into a large bowl. Add the melted garlic butter, remaining ½ teaspoon salt, remaining ¼ cup Parmesan cheese, and chopped fresh parsley. Toss everything together until the fries are evenly coated and flavorful. Serve immediately while hot and crispy for the best taste.
