  • 175 g Light Brown Sugar
  • 1 Yorkshire Tea Bag
  • 180 ml Boiling Water

  • 225 g Self Raising Flour
  • 1 Tbsp Mixed Peel
  • 1 Tsp Ground Cinnamon
  • 1 Tsp Mixed Spice
  • Pinch Nutmeg

Instructions

  1. Prepare Tea: Brew a strong cup of tea using one Yorkshire Tea bag and 180 ml of boiling water. Let it steep for a couple of minutes, then remove the tea bag.
  2. Soak Fruit: In a mixing bowl, combine the mixed dried fruit and light brown sugar. Pour the hot tea over and stir well. Cover and place in the fridge overnight to allow the fruit to absorb the tea and soften.
  3. Season Mixture: The next day, stir the soaked fruit mixture again. Add in the mixed peel, ground cinnamon, mixed spice, and a pinch of nutmeg. Mix thoroughly to distribute the spices evenly.
  4. Add Egg: Beat in one large egg to the mixture creating a wet, well combined batter.
  5. Add Flour: Gently fold in the self-raising flour until just combined, taking care not to overmix.
  6. Prepare Pans: Divide the batter evenly between two mini silicone bread loaf pans, filling each about three-quarters full.
  7. Air Fry – First Phase: Place the pans into the preheated Philips Air Fryer and cook at 180°C (360°F) for 15 minutes to set the structure and start baking the loaf.
  8. Air Fry – Second Phase: Reduce the air fryer temperature to 160°C (320°F) and continue cooking for an additional 20 minutes, or until a skewer or thermometer inserted into the center comes out clean.
  9. Cool: Remove the pans from the air fryer and allow the tea loaves to cool completely. Once cool, gently remove the loaves from the silicone pans.
  10. Serve: Slice the fruit loaf and serve with butter for a delightful teatime snack.

  • Soaking the dried fruit overnight in tea significantly enhances the flavor and moistness of the loaf.
  • Using silicone loaf pans ensures easy removal without sticking.
  • If you do not have an air fryer, this recipe can be baked in a traditional oven at 160°C (320°F) for about 40 minutes, checking for doneness.
