Ingredients
Scale
Chicken and Coating
- 1 ½ pounds boneless skinless chicken breasts, cut into 1 ½ inch pieces
- 2 teaspoons baking powder
- 1 teaspoon garlic powder
- 1 teaspoon kosher salt
- ¾ teaspoon paprika
- ½ teaspoon onion powder
- ½ teaspoon black pepper
- Olive oil spray
Sauce and Serving
- ½ cup buffalo sauce
- Rice (for serving)
- Carrots (for serving)
- Celery (for serving)
- Ranch or blue cheese dressing (for serving)
Instructions
- Prepare the chicken: Place the chicken pieces into a large mixing bowl to get ready for seasoning.
- Season the chicken: Add baking powder, garlic powder, kosher salt, paprika, onion powder, and black pepper to the chicken. Stir or toss the chicken thoroughly to coat evenly with all the spices.
- Preheat the air fryer: Heat the air fryer to 400°F (204°C) to ensure it’s ready for cooking.
- Arrange chicken in air fryer: Place the seasoned chicken pieces into the air fryer basket, spreading them out in a single, even layer with some space between each piece for proper air circulation.
- Spray with olive oil: Lightly spray the chicken pieces with olive oil spray to help achieve a crispy crust during cooking.
- Cook the chicken: Air fry the chicken for 8-10 minutes, or until the internal temperature reaches 165°F (74°C) ensuring the chicken is fully cooked and juicy.
- Warm the buffalo sauce: Heat the buffalo sauce in the microwave for 20-30 seconds until warm and easy to coat the chicken.
- Toss the chicken in sauce: Transfer the cooked chicken to a large bowl and pour the warm buffalo sauce over it. Toss or stir well to coat every piece evenly with the sauce.
- Serve: Serve the buffalo chicken bites over a bed of rice accompanied by carrots and celery sticks. Add ranch or blue cheese dressing on the side or drizzled over for dipping.
Notes
- Ensure chicken pieces are cut evenly for uniform cooking.
- Do not overcrowd the air fryer basket; cook in batches if necessary to maintain crispiness.
- Use a meat thermometer to guarantee the chicken reaches a safe internal temperature of 165°F.
- For extra crispiness, lightly spray the chicken again halfway through cooking if desired.
- Adjust the amount of buffalo sauce based on your preferred spice level.
- Leftover bites can be stored in an airtight container in the refrigerator for up to 3 days and reheated in the air fryer to maintain crisp texture.
