Ingredients

  • 12 slices sandwich bread
  • 8 slices bacon, cut in half
  • 4 tbsp. mayonnaise, divided
  • 1 tbsp. prepared basil pesto
  • 1 tbsp. prepared sun-dried tomato pesto (or a couple of pureed sun-dried tomatoes)
  • 1/2 lb. shaved ham
  • Romaine or green leaf lettuce
  • 4 avocados, peeled and sliced
  • 1/2 lb. shaved turkey
  • 4 slices cheese (Swiss, mozzarella, etc.)
  • Potato chips, for serving

Instructions

  1. Step 1: Toast the bread until lightly golden brown; set aside.
  2. Step 2: Fry the bacon until just barely crisp, then drain on a paper towel; set aside.
  3. Step 3: In a small bowl, mix together 2 tablespoons of mayonnaise and the prepared basil pesto. In a separate small bowl, mix together the remaining 2 tablespoons of mayonnaise and the prepared sun-dried tomato pesto.
  4. Step 4: Spread some of the basil pesto mayonnaise onto one side of 2 pieces of bread. On one piece, layer a few slices of ham on top of the basil pesto mayo, then add some lettuce. On the other piece, layer half of the avocado slices over the basil pesto mayo, then top with a few strips of bacon. Place the avocado and bacon bread slice, ingredient-side down, atop the ham and lettuce slice.
  5. Step 5: Spread some sun-dried tomato pesto mayonnaise on the top piece of bread, then top with turkey slices and lettuce. Spread one side of a third bread slice with the sun-dried tomato pesto mayonnaise and add the remaining avocado slices, bacon strips, and a slice of cheese. Place this bread slice, ingredient-side down, on top of the sandwich. Repeat the process to make additional sandwiches.
  6. Step 6: Use a sharp knife to cut each sandwich in half diagonally, then cut again into fourths. Serve with potato chips for a perfect crunchy side.

Tips & Variations

  • For extra flavor, lightly toast the sandwich after assembling to melt the cheese and warm the ingredients.
  • Substitute turkey or ham with grilled chicken or roast beef for a different twist.
  • Add tomato slices or pickles for additional freshness and crunch.
  • Use gluten-free bread to make the sandwich suitable for gluten-sensitive diets.

Storage

Store leftover sandwiches wrapped tightly in plastic wrap or in an airtight container in the refrigerator for up to 24 hours. Because of the avocado and bacon, it’s best enjoyed the same day. Reheat briefly in a toaster oven if desired, but fresh is always best.

FAQs

Can I prepare this sandwich ahead of time?

You can assemble the components ahead but it’s best to combine and slice the sandwich shortly before serving to keep the bread from getting soggy and the avocado fresh.

What can I use if I don’t have pesto?

If you don’t have prepared basil or sun-dried tomato pesto, you can substitute with flavored mayonnaise or a simple mix of mayonnaise and finely chopped herbs or sun-dried tomato pieces for similar flavor.

Perfectly balanced with melted cheese and accompanied by crispy potato chips, this sandwich is an indulgent, multi-layered meal ideal for lunch or a casual dinner.

Ingredients

Scale

Bread and Spreads

  • 12 slices sandwich bread
  • 4 tbsp mayonnaise, divided
  • 1 tbsp prepared basil pesto
  • 1 tbsp prepared sun-dried tomato pesto (or a couple of pureed sun-dried tomatoes)

Meats

  • 8 slices bacon, cut in half
  • 1/2 lb shaved ham
  • 1/2 lb shaved turkey

Produce

  • Romaine or green leaf lettuce (enough for layering)
  • 4 avocados, peeled and sliced

Cheese

  • 4 slices cheese (Swiss, mozzarella, or preferred type)

Accompaniment

  • Potato chips, for serving

Instructions

  1. Toast the Bread: Toast all 12 slices of sandwich bread until they are lightly golden brown. This will add a satisfying crunch and help prevent sogginess when assembling the sandwich. Set the toasted bread aside.
  2. Cook the Bacon: Fry the halved bacon slices in a skillet over medium heat until they are just barely crisp. Avoid overcooking to retain some chewiness. Drain the cooked bacon on paper towels to remove excess grease and set aside.
  3. Prepare the Mayonnaise Mixtures: In one small bowl, combine 2 tablespoons of mayonnaise with the basil pesto. In another small bowl, mix the remaining 2 tablespoons of mayonnaise with the sun-dried tomato pesto or pureed sun-dried tomatoes. These mixtures add creamy, herbaceous layers of flavor.
  4. Assemble the First Layer: Spread the basil pesto mayonnaise on one side of two slices of bread. On one slice, layer shaved ham and then a few leaves of lettuce. On the other slice, layer avocado slices topped with bacon strips. Carefully place the avocado and bacon slice, mayonnaise side down, on top of the ham and lettuce slice to form the first double layer.
  5. Add the Second Layer: Spread sun-dried tomato pesto mayonnaise on the top slice from the first layer. Add shaved turkey and lettuce on top of this spread. Next, take a third slice of bread, spread one side with sun-dried tomato pesto mayonnaise, and layer with the remaining avocado slices, bacon strips, and a slice of cheese. Place this slice, ingredient side down, on top of the turkey and lettuce layer. Repeat the process for additional sandwiches as needed.
  6. Serve: Using a sharp knife, cut each sandwich in half diagonally, then cut each half into quarters, creating manageable portions. Serve the sandwiches alongside potato chips for a delightful crunch and easy meal.
